Porch Before and Afters

Omg the before is so so bad! And of course the kids had to work their way into the after. 🙂

All I did was put a coat of paint on, add some flowers and moved a shelf because I thought it would look pretty good outside. All together the total cost was about $100. 

I’m pretty sure I’ve killed half those flowers already, but thats for another post. Next project: Paint the deck red!

Creamy Spinach Chicken Pasta

Tonight is the first night of my cooking on a budget. Since I was not taking a toddler to the grocery store today, I had to make do with what I had. I found a bag of chicken drumsticks, penne pasta, spinach and well, that was about it……it’s definitely time to grocery shop! I had no idea what I was going to make with this, but I threw the frozen chicken into the crockpot on high for 5 hours while I figured it out. I don’t have any cream soups or cheese and I’m out of potatoes so to me this was a challenge. I looked up cream sauce and found one to make with the ingredients I had. I then added the spinach to the sauce and kept adding half and half until it was the consistency I wanted. Its soooo good! It tastes kind of like a pesto sauce. The only thing I could think to do was make a casserole …sort of. I took the chicken off the bone and put it back in the crockpot, mixed in cooked penne pasta and poured the sauce in. Its looking good so far(well, it kind of looks strange but it smells good!) ….I guess the real test will be the children. I’m sure they will take one look at this green concoction and give me a look, but hopefully they can get past that to try it.

This was really easy to make …..I’m sure you can substitute chicken breasts for the drumsticks and throw this all together in the oven if you prefer not to use a crockpot.

I found the original sauce on cooks.com and then changed the amounts and added spinach.

Creamy Spinach Sauce

4 tbsp butter

1 tbsp minced garlic or you can use garlic powder

2 tbsp flour

half and half – I used about 3 cups, but you could probably use milk

1 13.5 oz can chopped spinach

2/3 cup parmesan cheese ( I used the grated)

salt, pepper, oregano to taste

In a large saucepan melt the butter and add the garlic. Remove from heat and stir in flour until smooth. Return to heat and add half and half. Add spinach, parmesan and spices. Heat until sauce is thick and smooth.  I had to keep adding half and half until I got the desired consistency.
