No sugar …30 days….join me won’t you?

9 Feb

Come on guys….misery loves company! I’m eliminating added sugar for the next 30 days and I’m actually on my way to the store to stock up on some healthier stuff to eat. If anyone wants to join me feel free to share your own experiences or I would welcome any good recipes. I will be posting different dinners, snacks, desserts, etc on here that don’t contain any added sugars. Sugar from fruit, milk, veggies are ok but anything that has the word sugar or any form of sugar in the ingredients is a no no. Oh and no artificial sweeteners (equal, Splenda, etc) or honey. Fun stuff guys…fun stuff.

I am horribly addicted to sugar and I’m hoping to break that in the next month and learn some healthier ways to satisfy my sweet tooth.

Here is a link to the challenge so you can join in too!

So far so good

14 Mar

Day one of no coffee….ok so it’s only been 2 hours but still. I’m doing ok considering I would have had about 3-4 cups by now. Instead, I made some green tea and while it comes nowhere even remotely close to coffee, it does provide something hot to drink in the morning. So that’s something.

And now it’s time for breakfast….a green smoothie. I know some of you may be wondering why I’m torturing myself, but it’s for the best. I think.

In the past when I’ve made these smoothies I used vanilla soy milk to add a bit of sweetness but this time around I’m trying out green tea. Yum. So without further bitching I will share my recipe:

Green Tea Smoothie:
Put 5-6 ice cubes in bottom of blender & add:

1 cup brewed green tea(I added a little Splenda )
1 banana
1 pear
1 small or 1/2 large apple
1 tsp ground flaxseed
Baby spinach leaves – I added a couple handfuls

Blend until pourable consistency & enjoy.

It’s actually pretty good….I don’t miss the soy milk at all and the flax seed gives it a hint of a nutty taste. I can drink these every day with no problem.
Ok, I may be back later telling you I can’t live without my coffee….I’m hoping not though.

Doing the unthinkable.

13 Mar

I’m giving up coffee. Yes, you heard me…..delicious, glorious, cant-live-without coffee.

Let me start off by saying that I’m in love with coffee…..strong, full-bodied, rich coffee. I usually drink anywhere between 6-9 cups a day. Probably not the healthiest, but I just love it so much. Lately though I haven’t been feeling that great and I’m soooo tired. I feel sluggish and have zero energy. It almost feels counterproductive to me to take away caffeine at this point, but from everything I’ve read it will make me feel better. I’m not convinced, but I’m going to give it a good try. I will replace my coffee with green tea and I’ve also bought some loose tea to try out in my stove top espresso maker.

Along with caffeine, I’m eliminating sugar (except from fruit) and flour. Good luck to those around me. I’m hoping these changes will make me feel better, give me more energy and help with weight loss. I bought some ground flaxseed and plan on using a little bit in the spinach smoothies I will be making. Sounds gross, but they are pretty good. I will post some recipes.

I will be posting a few times a week to update on my progress and hopefully writing about my success.

You can take away my cigarettes (3 years ago), my coffee and sugar but my whiskey is here to stay 🙂

Ahhhhhhhhhhhhhhhh!!!!!

3 Oct

Cooking the last few weeks has been really fun, but we’ve paid a price.  I can’t zip my jeans without using a hanger……yes people, its that bad. All of the breads, brownies, cookies and pastas have caught up with us. I say us, because my husband  is feeling the effects just as much as I am. He had a weigh in at work and lets just say that there will be no more bread making in the foreseeable future.

I’m not giving up on cooking though…..I just need to find healthier recipes to try out. As always, I’m open to suggestions so if anyone has a great recipe they want to share, feel free. I’m mostly looking for dinners and desserts, but anything is welcome. In the meantime I will be doing some research and coming up with some of my own.

Its too early for my winter weight!!

South Beach recipes

22 May

I’ve been pretty sporadic lately with my posts and I don’t try out recipes nearly as often as I like, but I’m going to make a better effort. I’m on day 4 of the South Beach Diet(which I’m loving) so I will probably be posting some phase 1 recipes soon. I’ve been eating the same thing every day and it will probably get boring soon. And we all know what happens when your diet gets boring….or at least what happens to me. I’m going to try to avoid eating every carb known to man in one sitting by finding and trying a variety of foods.

I will definitely be adding a section in the cookbook for my favorite SB recipes because even if you aren’t following the diet, more veggies, protein and fiber in your life probably can’t hurt.

I was happy to see that I can still have something sweet – I just need to be more creative with it. Right now I’m craving a chocolate milkshake so I have a feeling my next post will be some sort of phase 1 modified yummy treat.

I’m thinking this week at some point I will try a veggie pizza with cauliflower crust – it could either be delicious or a total train wreck!

Feel free to share your favorite SB recipes!

My gain is your gain….or your loss.

3 Apr

I’ve decided to work on a new section – the I’ve gained too much weight and have to lose it fast for the summer section. I’m still working on the name. But my gain is your gain – great healthy recipes and maybe some weight loss in the process.

I can’t make all these sugary, floury, fatty desserts and not eat them. I try to stay away and have others give me their reviews, but I have no willpower. So I’m making a decision to start on the healthier part of the cookbook. Well, the fact that I just got a pool and have to shove my ass in a bathing suit decided for me, but you get the point.  I was only going to do desserts, but I’m thinking its going to be a mix of dinners, breads, desserts, etc.

When I say healthy, I don’t mean tasteless and boring. I will not be posting recipes that taste like diet dishes. I also will not only write about boneless skinless chicken breasts….I promise! I will be searching for and making food that is not only healthier for you, but delicious also. I will try to use whole wheat flour, whole grain pasta and other substitutes as much as possible without sacrificing taste. I will still be using regular butter and sugar….just less of it. I’ve decided not to use substitutes for sugar because honestly, most of the time it tastes like ass. Sorry, but true.

Ok, now for my first attempt. I found a basic recipe for banana bread on Food Network and then made my own adjustments.

OATMEAL BANANA BLUEBERRY BREAD  Image

INGREDIENTS:

3/4 cup sugar

4 tbsp butter

2 large eggs

5 ripe bananas

1 tbsp soy milk (if you don’t have soy, 2 % is fine)

1 tsp cinnamon

1 1/4 cup whole wheat flour

1 cup rolled oats (not cooked)

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1 cup blueberries

THE METHOD:

Preheat oven to 325 and grease a 9″ loaf pan. Cream the butter and sugar in a mixing bowl until light and fluffy. Add the eggs one at a time beating well after each. In a small bowl mash the bananas. Add the milk and cinnamon. In another bowl mix the flour, oats, baking soda, baking powder and salt.

Add the banana mixture to the creamed mixture and stir til combined. Add the dry ingredients just until flour disappears. Mix in blueberries.

Pour batter into pan and bake for about 1 hour to 1 hour and 10 minutes or until a toothpick inserted in the center comes clean. Cool for 10 minutes in pan, then remove bread from pan and cool completely.

Reviews:

I love this bread. It came out moist and the mix of the blueberries with the bananas is perfect. The whole wheat flour didn’t taste mealy or coarse like it sometimes can.  I will definitely make this bread again. The only thing I would do different is cook it a little longer, probably the full 1 hour 10 minutes. I think these would make good muffins too.

Joey: He chose to have a slice of this bread instead of the banana cream pie in the fridge. When I asked him how he liked it, he said it was fantastic.

Tim:  He said it was good. That’s about all you are going to get from him…haha

Mariah: She had a piece and liked it too and she doesn’t usually like bananas or the texture of banana bread.
